CLARIFICATION, RELEASE OF AROMA PRECURSORS
Arozym is characterized by good clarifying ability, increases the rate of must sedimentation even at low pH, low temperature and high pectin concentration. It increases the must yield and reduces the solid content. Stabilizes the aromatic profile, eliminates the extraction of precursors of green tones
and enables the release of varietal aromatic precursors bound to glycosides.
DOSAGE
During static maceration: 1 - 2 g/hl at 5 - 12 °C, duration of action 3 - 8 hours.
